The grass pea is recognized as a traditional Italian agri-food product, an ancient symbol of a poor and peasant cuisine.
A legume similar to the chickpea, but rougher and with sharper edges, shaped like a pebble, with a more intense flavor.
Hagrinen Dehusked Grass Peas are quick to cook and ideal for creams and purees.
Excellent also in soups, broths, or served alongside many typical Italian dishes.
Easy to digest because the substances that cause bloating are removed with the outer husk.
In Italy there are many grass pea festivals: the most famous is held in November in Serra De’ Conti, in the Marche region.

One of the oldest and most consumed legumes in antiquity. Traces of the grass pea have been found in Mesopotamia archaeological sites dating back to more than 8,000 years ago.

The grass pea has long been part of the traditional Italian peasant diet. It was often synonymous with famine because when other crops failed, the grass pea survived and became the only food available to farmers during drought years.

The grass pea was often grown in marginal lands of the Apennines among rows of vines, to ensure a source of protein throughout the year.

In the twentieth century, the grass pea was abandoned because it required a large amount of manual labour. Today it has been rediscovered and is cultivated in the hills of central Italy, an ideal habitat in terms of purity and authenticity.

Preparation tips

No soaking is necessary for Dehusked Grass Peas. Cook them in boiling water for 15-30 minutes according to taste and the final consistency you wish to obtain.

Before cooking, sifting by hand is recommended to check for any impurities. If you want to add salt, it is advisable to do so at the end of cooking, using it sparingly because grass peas already have a full and delicious flavor.

Dehusked grass peas are perfect for the preparation of soups, minestrone and delicious mashed purees, following the traditional recipes of Italian regional cuisine.

They also make an excellent side dish. In this case we recommend simple condiments that do not mask the ir characteristic flavor but enhance it, such as extra virgin olive oil and the addition of aromatic herbs such as thyme, oregano and rosemary, which also help to make all legumes more digestible.

The dehusked product is used for preparing grass pea puree to serve as a side dish as an alternative to classic mashed potatoes, as a condiment for pasta, or as a side dish along with other vegetables.
