Preparations tips

Grass Pea Flour is very tasty and extremely

versatile. It can be used to prepare soups, broths, traditional pasta (maltagliati and pappardelle), excellent pizza bases (gluten-free) and polenta.

Ideal also for fried vegetables and fish, lending crunchiness and lightness.

Nutritional properties

Grass Pea Flour is rich in protein and low in fat and can contribute to a diet that is substantial yet at the same time low in calories, highly recommended for those who follow a vegetarian diet.

It provides calcium, phosphorus, B-group vitamins, mineral salts, fibers and polyphenols. Because of its properties, it is helpful in nutritional oligotherapy and to counteract memory disorders.

From a nutritional point of view, in order to better assimilate its proteins, it is advisable to consume Grass Pea Flour alongside cereals (rice, spelt, barley, pasta).
